Jatoba, or Brazilian Cherry, is a gray/white sapwood and heartwood that originally has a pinkish, almost orange/brown color when freshly cut, which over time will turn reddish brown with random dark streaks that add to its character. Brazilian Cherry is extremely hard with a beautiful range of colors, making it one of the most sought after exotic hardwoods.
